This is a two-year course that teaches the skills required to be successful in the hospitality industry and to overlay these skills with generic business and management subjects taught in the context of hospitality. Typically these skills can be applied anywhere there is a customer focus in business and reach far beyond the hospitality industry allowing great scope and flexibility to one's career options. The advanced Diploma is also structured to prepare the student for further study. Students with a 70% grade average students can articulate to the third year of the La trobe University Bachelor of Business (Tourism and Hospitality) that is also taught at William Blue. In the final semester of the course, students complete paid (at commercial rates) work placements with leading hospitality establishments.

The course is atructured as an Advanced Diploma of Hospitality Management with a commercial cookery stream and is designed to equip students with the skills necessary for a successful career in Commercial Cookery as a Head Chef or senior, supervisory roles in busy commercial kitchens. The course incorporates subjects from the general Hospitality Management course, which means that students also gain knowledge and skills to work in management role in a number of departments within hospitality establishments. Throughout the course, students develop industry skills throuh various work placements and in the final semester of the course, students complete paid (at commercial rates) work placements.

This is a two-year course that introduces the skills required to be successful in the hospitality industry and to overlay these skills with generic business and management subjects. This course is designed to help develop professional skills, however through a more analytical engaged learning style. The more analytical approach will suit some students more than vocational courses and it provides an excellent pathway into the Bachelor program. Students who successfully complete the Associate Degree with a 50% grade average can articulate directly into the third year of the Bachelor in Business (Tourism & Hospitality). Thｒoughout the course, students develop industry skills though various work placements and in the final semester of the course, students complete paid (at commercial rates) work placements.
